Hello everyone! I’m back with another super simple meal prep recipe. This week, it’s honey mustard-crusted tilapia with spiced red potatoes and mixed veggies! For this post, I’ll be focusing specifically on how to prepare your tilapia. Read the recipe below:
Honey Mustard-Crusted Tilapia
- 6 tilapia fillets (or as many servings as you need to meal prep; 1 fillet/meal)
- 3/4 cup light honey mustard dressing
- 3 cups breadcrumbs
- Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with foil. Spray with non-stick cooking spray. Coat both sides of tilapia fillets with honey mustard dressing. Pat breadcrumbs firmly onto tilapia.
- Place tilapia fillets on prepared baking sheet. Bake 15 minutes or until fish flakes easily and breadcrumbs are browned.
It’s just that simple, guys! Calories for each fillet? About 215!
For this meal, I also cut some red potatoes and spiced them with salt and pepper, and added a side of normandy blend veggies. A serving of red potatoes (~ 120 cal/1 red potato) and of normandy blend veggies (~30 cal/1 serving [1 cup]). For under 400 calories per meal prep, you will enjoy a deliciously well-rounded lunch!
